What you need:
1 head fresh cauliflower
2 T coconut oil
**optional: diced onions, diced peppers, diced carrots or any other veggie
How to do it:
Cut your cauliflower into pieces small enough to fit into the mouth of the food processor. Using your “grate” blade, process all of your cauliflower and you will notice it has a “rice-like” appearance.
Melt your coconut oil in a pan (cast iron works best) and saute your cauliflower and any other veggies for about 8 minutes.
Add salt/pepper to taste, or add some other spices to change it up! :o) My favorite blends are chili powder/cumin for a mexican flair or ginger and curry!
