*Quinoa must be rinsed thoroughly or it will taste bitter. **If you soak your grains, you will need to adjust your cooking time.
2 cups quinoa
3 cups water (or favorite broth)
pinch of salt
1 T. coconut oil
Bring water, salt, and coconut oil to a gentle boil.
Add quinoa and bring heat to med/low.
Cover and let cook for 20 minutes undisturbed before lifting lid to check.
If it needs more time, don’t go far. You’ll want to check it every five minutes or so in order to prevent burning the bottom.
Once all water (or broth) is absorbed, cover, remove from heat, and let sit for 10-15 minutes.
Fluff with fork and serve.
Once you remove it from the heat, you could add some fresh herbs. Let them sit to infuse the flavor before you fluff with a fork. One of our favorites is fresh cilantro with lime zest. You could also choose to make it sweet (a great breakfast option) by adding cinnamon, honey, vanilla, cream,….. your options are only limited by your taste buds. ;o)
